The rum is gone because the Hobbits took it. Whilst taking the rum, Jack Sparrow fell and dropped his jar of dirt, leaving everyone still guessing what's inside it. Guessing that the jar of dirt must contain something important, the Hobbits took that as well. Everyone else, angered by the Hobbits' stealing, take them to Isengard for punishment.
